We left our friend Brandi’s house in Sparta, Kentucky last Friday. (After fighting with a frozen camper and a dead slide motor…) And things have not gotten any easier! We stopped at the Iowa 80 Truck Stop for the night. We love that place! We snuck into our secret spot again where we can open the slides and not block any truck parking spots. Then we hit the road first thing Saturday morning and headed up to Saint Paul, Minnesota. Continue reading

Slow Cooker Baked ZITI

Now that fall is here and the weather is getting cooler, I’m using my slow cooker a lot more.

The slow cooker is also great when I can use one of those slow cooker disposable liners. Especially when we are traveling and don’t necessarily have time to do lots of dishes (or when we don’t have a full hook up site for the camper!) Not to mention, anything you can make in one pot saves a ton of time and space, and space is ALWAYS at a premium in RVs…

This is a first for me though, making pasta in the crock pot, but it came out great! Continue reading

Living on Site

It really kind of annoys me when people start out blog posts apologizing for not posting recently so I won’t do that. I know I haven’t, if you follow our blog then you know too, and to be completely honest, I was busy trying my best to help my friend so I’m not really sorry.

After we did our trek from San Francisco, back east across the country in July, staying mostly for free on BLM land and at truck stops, I sort of despise paying rent. Continue reading

Traveling with pets can make life a little more difficult for sure. But they also add a ton of joy! In my opinion, it’s a whole heck of a lot easier in an RV than it would be in motels… Regardless of where you sleep, there are some aspects that can be difficult when your traveling, like vet visits.image
