These were WAY easier than I expected them to be, and they came out great for my first go at them…
- 1/2 tbs yeast
- 2 cups bread flour
- 1 tsp salt
- 1/2 tbs brown sugar
- 3/4 cup lukewarm water
Put all these ingredients into the bread pan and press the “bagel dough” button.
Once it’s finished, cut the dough into 4 equal parts and shape into smooth, round balls. (Or try your best at smooth and round) Then place them on a baking sheet, lined with parchment paper, lightly greased, cover with plastic wrap and let them sit for about a half hour.
During the half hour, mix together in a large, wide pan:
- 64oz. water
- 2tbs brown sugar
- 1tbs sugar
Bring all that to a boil then reduce it to a simmer. Preheat the oven to 425 (or convection oven to 400). Then poke a hole through the center of the doughball and twirl around your pointer finger until the hole is about 2″ in diameter. (Mine look perfect, right?)Boil them gently in your water/sugar mixture for 2minutes on one side, then flip over for another minute or two. Remove them and put them back on the greased parchment lined baking sheet.
Sprinkle with seasoning if desired… (It’ll stick better if you brush the tops of the bagels with an egg wash first – 1 egg white mixed with 2 tbs water) I used a homemade “everything” seasoning mixture… I mixed Canadian Steak Seasoning, sesame seeds, chia seeds and fennel seeds.
Pop them in a preheated 425 degree oven (or a 400 degree convection oven) for 25-30 minutes, flipping half-way through. Until you get the desired darkness that you want.
Cool them on a wire rack completely before slicing.
These were SO good! I had one with avocado, one with cream cheese, then we dipped them into chili another time… SO good.
