Country Green Beans and Potatoes

Allen was raving about his mom’s green beans on Christmas so I thought I’d give it a try with something similar.

I used a small crock pot for these, but you could use a larger one and they’d probably take less time.

  • 2 cans of cut green beans
  • 2 medium red potatoes (diced small)
  • a small onion (sliced)
  • 4 slices of bacon (fried, saving the drippings)
  • 4 oz butter
  • 1 tbsp dry ranch seasoning
  • garlic, salt and pepper to taste

Cook the bacon until just starting to crisp, dice it, then add it along with the drippings to the crock pot. Mix in the rest of the ingredients. Cook on high until the potatoes are soft. Mine took about 6 hours, but I used the baby crock. Or you could cook them on low for about 8 hours and they should be delicious.

These were SO good. I could’ve definitely gotten away with using one can of beans and one potato but I wanted to have enough for Allen to take to lunch the next day. I served these with a homemade version of shake and bake oven fried pork chops, but they would be delicious with a grilled steak I think also.
