2-3 lbs of chicken (I prefer thighs)
1-2 onions, sliced
A head of garlic, sliced thin
ginger (I use the stuff in the tube, and just give it a good squeeze)
3-4 bay leaves
pepper and crushed red pepper (depending on your preferred spice level)
3/4 cup soy sauce
3/4 cup vinegar
1/2 cup water
Put all this in the slow cooker. Cook on low for 5-6hrs. Serve over rice topped with green onions.
Optional: add mushrooms (from the beginning), or add broccoli about a half hour before serving.
