Quick, Easy & Cheesy Sausage, Broccoli & Potato Skillet

I am in no way going to pretend that this is healthy! (Although it DOES have an entire bag of broccoli!) But, it is quick and easy and uses one skillet, one knife, one cutting board, and one spoon! What’s more: it’s only 3 ingredients!

  • A smoked sausage “horseshoe” – whatever flavor you prefer
  • A bag of frozen broccoli
  • A box of scalloped potatoes (you could use au gratin if you’d like)

Slice the sausage and toss it in a hot skillet (coated with olive oil if it isn’t nonstick). Let it brown up for a few minutes then add the broccoli. Stick a lid on it and let it go for 3-4 minutes, until the broccoli thaws. Then just follow the directions on the box of potatoes. Mine called for a tablespoon of butter or margarine, 2 cups of hot water, 2/3 cup of milk, the seasoning and potatoes. I brought all that to a boil over high heat, put a lid on it and reduced the heat to low. After about 7 minutes I gave it all a stir and covered it back up. 7 minutes later it was done! Voila!

So easy. So cheesy. And it took less than 30 minutes, with 3 main ingredients.
