Low Maintenance Slow Cooker Mashed Potatoes

  • 3 lbs potatoes (peeled if you would like… I halfway peel mine if they aren’t red potatoes, but we all know that russets and idahos make the best mashed due to the starch)
  • 1/2 cup water
  • 3-4 garlic cloves
  • salt and pepper to taste
  • 1/2 cup or more of sour cream
  • a glob of cream cheese (maybe 1/3 of the block)
  • LOTS of butter (real butter always makes them super yummy)
  • half and half or whole milk 

Put the potatoes, water, garlic, and salt and pepper in your slow cooker. Cook on high 4-5 hours or low 8-9 hours until potatoes are good and tender. I mash mine with a hand masher and add the butter first. Followed by the cream cheese and sour cream. Then finally the cream or milk to get them to the consistency I want. Remember to taste! And don’t be afraid to add some parmesan or green onions if you’d like that!
