This originally came from a Taste of Home Grilling magazine I picked up. I changed it a little to fit what I had… (actually-I completely forgot to add the sausage. But didn’t realize until the next day!)
I made 4 foil packets out of this, yet Allen & I finished off all four!
- 4 medium red potatoes, cut into 4 chunks each
- 2-6oz salmon fillets, halved
- 1lb medium shrimp, peeled with tails on
- 2 ears of corn, shucked and halved
- olive oil
- Old Bay, Blackened Old Bay, Slap ya Mama seasoning
- 4 tbsp butter, divided
- heavy duty foil
- optional: 1/2lb smoked sausage
- optional: lemon wedges
Preheat the grill. You want “medium” heat. We use a Weber Q (just a little guy), so I turn it down to low… Divide everything between 4 pieces of foil. Drizzle with olive oil and sprinkle liberally with seasoning. I used the really hot Slap ya Mama for some spice. Cover each with more foil and seal tightly around the edges to keep in all the steamy goodness. Stick them on the grill. In our case, we left them for 25minutes, flipped them and grilled for 15 more minutes. Check one to make sure the shrimp are pink, the salmon flakes easily with a fork, and the potatoes are soft. Be careful because they WILL be hot and steamy! Add about a tbsp of butter to each packet once you open them for some added richness. Enjoy!
